The standard privacy latch hooks a door to a fixed surface — either the door jamb or the wall. In a biparting setup, when both doors are closed there's no fixed surface at the center meeting point for the strike plate to attach to. The biparting latch solves this by connecting the two doors to each other instead, so no wall or jamb surface is needed.

The key is to install both components simultaneously while the latch is engaged. Close both doors fully, hold the hook and catch plate against their respective door faces in the latched position, then drive the screws while the latch is still closed. This ensures both pieces are perfectly aligned with each other. If you mount one piece independently first, it's very difficult to get the second piece to align correctly.
